How To Prepare Hasselback Potatoes

A Mrs Hasselback from Denmark invented these sliced potatoes, baked to crisp perfection in the oven and flavoured with different seasonings, as a speedy alternative to baked or roast potatoes.
What you'll need: 
2 medium sized potatoes per person
Peper & salt
A drizzle of olive oil or butter
Scrub the potatoes and pat them dry, then cut a thin slice off one side of each to form a flat base. For older potatoes with bad skins, peel before slicing.
Slice each potato thinly, taking care not to cut right through to the base by using two wooden spoons. Hold the spoon handles securely on either side of the potato, then cut down as far as the spoons will allow. Make sure the slices are thin and even so that the potatoes cook through.
Carefully open up the slices with a knife and season well with salt, pepper and olive oil or butter. Pre-heat the oven to 170C/325F/Gas 3.
Place the potatoes on a greased baking tray and bake in the oven for about 50 minutes, or until crisp and cooked through.
Hasselbacks can be served as an alternative to roast or baked potatoes. For variety, try different favourite toppings of herb butter, garlic mayonnaise etc.
