How To make a Vegatarian Bean and Mushroom Burger

Vegetarians and vegans can enjoy these healthy veggie burgers. With salad and pitta bread they make a substantial meal. Serves 4.
What you'll need: 
1 tbsp olive oil
1 small onion, finely chopped, 1 garlic clove, crushed
1 tsp ground cumin, 1 tsp ground coriander
1/2 tsp ground turmeric
4 oz finely chopped mushrooms
14 oz can of red kidney beans
2 tbsp chopped fresh coriander, wholemeal flour, for shaping
olive oil, for brushing
salt and black pepper
salad and warmed pitta bread, to serve
1: 
Heat the oil in a large pan and cook the onion and garlic over a medium heat, stirring, until softened. Add the spices and cook for a further minute, stirring continuously.

Add the mushrooms and cook, stirring until softened and dry. Remove from the heat.
3: 
Drain and rinse the beans thoroughly and then mash well with a fork.
4: 
Stir the beans into the pan, with the fresh coriander, mixing thoroughly. Season well with salt and black pepper.
5: 
Using floured hands, form the mixture into flat burger shapes. If the mixture is too sticky to handle, mix in a little flour.
6: 
Brush the burgers with a little oil and cook on a hot beabecue for 8-10 minutes, turning once, until golden brown. Serve with a crisp salad and warmed pitta bread.
