How to make vegan hot cocoa

Ready-made cocoa mixes usually contain milk, but it's quick and easy to make your own vegan hot cocoa. Soya milk or another non-dairy milk can be used.
What you'll need: 
1 tablespoon cocoa powder
1 to 1-1/2 tablespoons sugar
2 tablespoons water
250ml soya milk or other non-dairy milk
1/4 teaspoon vanilla extract (optional)
Combine cocoa powder, sugar and water in a small saucepan and whisk to combine completely. Turn burner on to medium heat.
Gradually whisk in soya milk or other non-dairy milk and heat until very hot but not boiling.
Remove from heat and stir in vanilla extract, if using.
Pour into a mug and serve.
Makes one serving.
For a different flavour, add a couple drops of peppermint or orange extract.
