How To Make a Simple Tea Loaf

This simple recipe can’t go wrong – even for the most culinary challenged amongst us! It has its roots in WWII rationing and everyone’s grandmother or mother has their own version.
What you'll need: 
1 teacup cold tea
1 beaten egg
3 ozs margarine
1 teacup sugar
1 teacup dried mixed fruit
2 large cups self raising flour
1 tsp mixed spice
Simmer tea, margarine, sugar and fruit in a saucepan for 3 minutes. Allow to cool.
Mix ingredients with the flour, spice and beaten egg.
Line a 2 lb loaf tin with greaseproof paper, pour in the mixture, and cook for 1 hour 45 minutes (approx) at Gas Mark 4/180C/350F
This was a handy recipe for making a quick fruit loaf for unexpected guests. It is delicious eaten the same day, but equally as good the following day spread with butter and raspberry jam.
