How to make a quick gateau-style Pineapple Dessert
When time is short, an impressive dessert can be made quickly using tinned pineapple and bought sponge flan cases.
What you'll need:
425g tin pineapple rings.
300ml whipping cream.
3 medium sponge flan cases.
Cut the ridges off the flan cases making three flat rounds of sponge cake. The left-over pieces can be frozen or stored for a short time in an airtight container and used in a trifle.
Drain pineapple and reserve four rings. Cut the remainder into small pieces.
Whip cream until stiff enough to stand in peaks. Spread a thin layer of cream over one of the sponge layers and set aside. This will be the top layer. Stir pineapple pieces into remaining cream.
Place one layer of sponge on a serving dish and cover with half the cream and pineapple mixture. Place another layer of sponge on top and cover with remaining cream.
Place the top layer in place and arrange the four pineapple rings on it. Dreain cocktail cherries on kitchen paper and place one in each ring.
This dessert is best assembled just before serving, but the sponge flans can be trimmed and the pineapple cut up a little in advance.
