How to make an Egg Mayonnaise Starter

A quick and tasty starter can be made as follows.
What you'll need: 
4 hard boiled eggs
200g of good quality potato salad
Lettuce (preferably of the crisp variety)
Paprika pepper
1: 
Place several lettuce leaves on four plates.
2: 
Put about 50g of potato salad on each lettuce base.
3: 
Shell the eggs and cut each in half lengthwise. Give a half turn and cut again. Arrange four pieces of egg, spread out like flower petals, on top of each pile of salad.
4: 
Sprinkle a little paprika pepper in the centre of the egg petals.
5: 
Serve with crusty bread and butter.
Conclusion: 
If liked, a small amount of mixed diced vegatables, such as celery, pepers or cooked carrot, can be stirred into the potato salad for extra taste.
Tips: 
Prepare as near as possible to serving.
