How to make crab and sweetcorn soup

This soup is very simple and delicious. It is a recipe for the Chinese soup you can buy at most restauraunts and take aways. This recipe makes a quick meal when you just do not have the time or energy to cook anything too time consuming.
What you'll need:
Small tin of crab meat.
Small tin of sweetcorn.
Two teaspoons of ginger.
Pinch of salt and pepper.
Three mugs of water.
Sprig of lemongrass.
Two teaspoons of cornflour.
1:
Place a saucepan on the stove. Open the crab meat and pour the contents into the saucepan. Drain the sweetcorn as we do not need the jiuce. Place this also into the saucepan.
2:
Turn the stove onto a medium heat and add the ginger, salt, pepper and lemongrass. Give it a good stir. Allow this to cook for about five minutes to blend the flavours. Occasionally stir the soup to blend and prevent sticking.
3:
Add the three cups while stirring again. Place a little water in a small cup and add the cornflour. Stir it until it is all mixed well and add to the soup. Stir the soup again and allow to cook for about ten minutes.
4:
Place in bowls and serve with some nice crusty bread if you want it to be more filling. This amount serves two people. You can double up on the ingredients to serve more.
Conclusion:
I find this an excellent recipe on a cold winter evening when I have been working until late evening. It can also be a good appetizer as a starter at a dinner party. You do not need any scales for this recipe. There is Little washing up afterwards as there is no need for loads of utensils and pots.
