How to prepare Hot and Sour Noodle and Mushroom Salad

This lunch meal is healthy but filling. They are also easy to prepare and use inexpensive, everyday ingredients.
What you'll need: 
250g/9 oz rice vermicelli noodles
2 tbsp sesame oil
6 spring onions
175g/60z button mushrooms
1/2 cucumber
For the dressing: 4 tbsp sesame oil
2 tbsp Thai fish sauce
Juice of 2 limes
1 tsp sugar, 1-2 tsp hot chilli sauce
2 tbsp chopped fresh coriander
1: 
Soak the noodles in a bowl of hot water for 10 minutes, or according to the packet instructions.
2: 
Drain and place in a large bowl.
3: 
Add the sesame oil to the noodles, and toss until the noodles are coated in oil.
4: 
Slice the spring onions and mushrooms, then cut the cucumber into matchsticks, and add to the noodles.
5: 
To make the dressing, place the sesame oil, fish sauce, lime juice, sugar and chilli sauce in a small bowl and whisk together. Stir in the chopped coriander.
6: 
Pour the dressing over the salad and toss until coated.
7: 
Serve immediately.
Conclusion: 
Have at least five portions of vegetables per day so if your recipes leave you lacking, supplement with plenty of vegetables prepared in different ways.
