How to prepare baked sweet potato and eggs

The fibre content of sweet potatoes is higher than that of common potatoes and it tastes good too. When these two factors are combined with other minerals like magnesium present in sweet potatoes, it makes an excellent facilitator for digestion. Sweet potatoes are easy to digest, since they mainly contain starch. They are soothing for the stomach and intestines too. Try this tasty and delicious recipe at home and enjoy the nutritious goodness of the sweet potato.
What you'll need: 
2 extra-large potatoes (with peel)
3 tablespoons sour cream
2 tablespoons chopped fresh chives or
1½ teaspoon diced green onions
1 tablespoon butter (softened)
Pinches salt and freshly ground black pepper to taste
4 large eggs
1 tablespoon fresh parsley (chopped)
¼ teaspoon paprika (for garnish)
Preheat oven to 350 degrees Pierce potatoes in several places with fork to allow steam escape.
Bake approximately 30-45 minutes or until potatoes are tender
Remove from oven and let cool until able to handle.
Once the potatoes are cool, cut each potato in half lengthwise
Scoop out the pulp into a bowl, leaving 1/8 -inch thick shell
Place potato shells onto a lightly greased baking sheet; Set aside.
Using a potato masher, mash potato pulp until no lumps remain
Thereafter, add sour cream, chives, butter, salt, and pepper; stir well.
Divide and spoon potato mixture into the four potato skin shells, spreading evenly. Make a ¾ -inch deep oval indentation in the filling along the length of each potato shell to hold an egg. Bake, uncovered, for approximately 10 minutes until hot; remove from oven. Break one egg into each potato indentation.
Sprinkle with salt and pepper and with the cheddar cheese, parsley, and paprika, then return to oven and bake for approximately 15 minutes or until the eggs are cooked. Remove from oven and serve cool or hot with a rich bottle of white wine to complement the taste. Go on enjoy good food!!
