How To Make Vegan Chocolate Swirl Shortbread
Chocolate swirl shortbread always looks gorgeous and yummy. It also seems hard to recreate at home, but it’s possible to recreate this wonderful looking shortbread. This recipe is for vegan chocolate swirl shortbread which can be adapted for gluten free or all butter chocolate swirl shortbread.
What you'll need:
150 grams plain flour (for plain shortbread)
55 grams caster sugar (for plain shortbread)
½ tsp salt (for plain shortbread)
125 grams unsalted vegan butter (for plain shortbread)
127 grams plain flour (for chocolate shortbread)
25 grams vegan cocoa powder (for chocolate shortbread)
55 grams caster sugar (for chocolate shortbread)
½ teaspoon salt (for chocolate shortbread)
125 grams unsalted vegan butter (for chocolate shortbread)
Food processor (optional)
To make the plain shortbread dough, place butter, salt and sugar into the food processor. Blend together until smooth and fluffy. Sift the flour and blend a bit at a time with the butter mixture in the food processor until dough forms together. Bring dough mixture into a ball; cover the dough and place in the fridge for 30 minutes to firm up for rolling.
To make the chocolate shortbread dough, follow the same instructions as above but add the cocoa powder to the flour.
Preheat oven to 150 degrees. Lightly flour the work surface, remove the doughs from the fridge and roll both doughs out to 1 cm thick rectangles. Make sure the both shaped out rectangles are the same size.
Place rolled out plain shortbread dough unto a baking paper. Place the rolled out chocolate shortbread dough on top of the plain dough.
Gently roll the shortbreads tightly together into a log shape and tuck the ends in. Chill in the oven for 1 hour until firm.
Take chilled log dough out from the fridge and use a sharp knife to cut log into 1 cm thick slices. Arrange the slices on a baking tray lined with baking paper and leave space between each one.
Bake in the oven for 25 minutes until edges are slightly golden brown. Transfer to a wire rack to cool down.
You can now eat your vegan chocolate swirl shortbread.
You can change this recipe into gluten free chocolate swirl shortbread. Replace with a mixture of gluten free flours for the plain flour measurements for each dough mixture. Add ¼ teaspoon of xanthan gum to each flour dough measurements as well. Follow the rest of the instructions as above to complete baking. This is a nice treat to bake for guests at festive seasons or any special occasion. You can give this chocolate swirl shortbread as gifts to someone who loves shortbread.
You can flavour with vanilla or almond flavouring if you want as well.
