How to make spring vegetable soup
If you are like me and prefer to make your own soup, here is a quick and easy recipe. It is wholesome, delicious, and filling. Serve with crusty bread. This vegetable soup serves 2 people.
What you'll need:
2 tbsp olive oil
3 sticks of celery (chopped into small chunks)
3 leeks (thinly sliced)
3 carrots ( thinly sliced)
1 oz pearl barley
2 pts of vegetable stock
2 oz mangetout (sliced diagonally)
Heat the olive oil in a pan, add the celery, leeks, carrots, and cook for 10 minutes, until softened.
Stir in the pearl barley, the mangetout and the vegetable stock. Season with a little salt and black pepper.
Bring to boil, and simmer on a low heat, for 15-20 minutes. Serve with your favourite crusty bread.
This versatile soup could be served any time of the day, at lunch time, or as a simple supper.
