How To make Smoked Salmon and Chive Omelette

The added ingredient of smoked salmon gives this dish a luxurious quality. You can use this basic omelette recipe as a basis of endless varieties. Simply replace the salmon and chives with other ingredients, such as, ham and parsley or grated cheese and basil leaves. Serves 2 people.
What you'll need: 
4 eggs
1 tbsp chopped fresh chives
2oz smoked salmon (roughly chopped)
knob of butter
salt and black pepper
Beat the eggs until just combined, then stir in the chives and season with the salt and pepper.
Heat the butter in a medium-sized frying pan, until frothy. Pour in the eggs and cook over a medium heat for 3-4 minutes, drawing the cooked egg from around the edge into the centre of the pan from time to time.
At this stage, you can either leave the top of the omelette slightly soft or finish it off, by flipping it over to brown on the other side, depending on how you like your omelette.
Top with the smoked salmon, fold the omelette over and cut in half and serve.
Great recipe any time of the day, for either breakfast, lunch or a simple supper. Great served with hot, buttered toast.
