How To make Slow cooked Chicken with Smoked Cumin

This is a delicious one pot recipe for five people, and very easy to make. It's sure to become a family favourite.
What you'll need: 
3 tbsp of cooking oil or olive oil
2 heaped tsp of cumin seeds and 1 tbsp of roasted cumin seeds
2 white onions, finely chopped
4 cloves of garlic, crushed
1oz of fresh ginger, grated
1 tin of chopped tomatoes and 1/2 pint of cold water
5 boneless and skinless chicken thighs
2 tsp of the following spices; coriander, cumin, garam masala
1 tsp of the following, turmeric and chilli powder
A pinch of salt and black pepper
Heat the oil in a large non-stick pan and add the cumin seeds. When the seeds begin to crackle and smoke add the 2 chopped onions.
When the onions have softened, add the chicken thighs and brown on both sides. This should take about 7 minutess.
Next add the grated ginger and the crushed garlic cloves, cooking gently for 2 minutes.
Add the spices, the coriander, chilli powder, garam masala and turmeric. Mix well with a wooden spoon to incorporate the spices.
Add the tin of chopped tomatoes and the 1/2 pint of cold water, mixing well. Season with salt and pepper.
Bring to the boil, then simmer gently on a low heat for 20 minutes. When cooked, sprinkle with the roasted cumin seeds.
Serve with basmati rice and naan bread.
