How To Make Rice Pudding

Rice pudding is a lovely dessert to have during the winter months. It’s simple to make your own rice pudding and it will definitely leave you with a nice warm feeling.
What you'll need: 
70 grams short grain rice
500 ml milk
1 egg (beaten)
55 grams brown sugar
½ teaspoon vanilla extract
¼ teaspoon cinnamon
¼ teaspoon salt
Heavy based saucepan
Place rice, milk and salt into the saucepan and boil on high heat. Stir the rice and simmer on low heat for 25 minutes. Make sure you stir the rice regularly to prevent burning.
While the rice is cooking, pour egg and sugar into the bowl and mix them well together. Add a good sized amount of the hot rice mixture to the egg and sugar mix. Add a spoonful at a time and mix it well.
You can now transfer the egg mix to the rice and milk in the saucepan. Stir the mixture well and cook for 10 minutes or until thickened and continue stirring and don’t boil. Stir in the vanilla and cinnamon at this point. Remove from the heat.
You can now serve your rice pudding warm or cold.
The trick with rice pudding is to keep watch over it and to stir it frequently. You can add other spices if you want to flavour the rice pudding.
You can add raisins, currants or sultanas to you rice pudding if you want.
