How To make Pancakes with Caramelized Pears

Williams Pears are especially good for this recipe, as, they are juicier than other varieties. This recipe is delicious, and tasty, anytime of the day.
What you'll need: 
8 ready-made pancakes
4 ripe pears, peeled, cored and thickly sliced
2 tbsp light muscovado (brown) sugar
2oz butter
Preheat the oven to 150c or Gas 2. Tightly wrap the pancakes in foil and place in the oven to warm.
Heat the butter in a large frying pan, and add the pears. Fry for 2-3 minutes, until the undersides are golden. Turn the pears over and sprinkle with sugar. Cook for a further 2-3 minutes, until the sugar dissolves and the pan juices become sticky.
Remove the pancakes from the oven and take them out of the foil. Divide the pears among the pancakes, fold each pancake in half, and then into quarters. Place two folded pancakes on each plate. Drizzle any remaining juices over the pancakes and serve immediately.
Pancakes with Caramelized Pears, quick and easy, and simply delicious.
For a really indulgent snack, top the pancakes with a spoonful of creme fraiche or fromage frais.
