How to make oatcakes

It is quite expensive buying those little boxes of oatcakes to have with cheese, so why not make your own? They are quick and easy to make and far more delicious than bought ones.
What you'll need: 
120g (4oz) medium oatmeal (e.g. The Oatmeal of Alford)
120g (4oz) wholemeal flour
1 tsp bicarbonate of soda
½ tsp salt
60g (2oz) butter, melted
7 – 8 tbsp boiling water
Mix the dry ingredients together
Stir in the melted butter.
Stir in enough hot water to make a soft dough.
Knead for a few minutes.
Roll out the dough as thinly as possible (for crisp biscuits) and cut out shapes using a pastry cutter, or simply cut into small triangles.
Place the biscuits on a greased baking sheet and bake in a hot oven 200oC or 400F for about 10 – 15 mins.
Store your biscuits in an airtight container.
These are delicious with cheese, of course, but also lovely with butter and marmalade for breakfast.
