How To Make A No Bake Strawberry Cheesecake

This no bake strawberry cheesecake is for those who don’t like baking. It doesn’t contain any eggs and is very easy to make - you can even use frozen strawberries for this cheesecake.
What you'll need: 
225 grams strawberries
10 digestive biscuits
50 grams of butter
200 gram Mascarpone cheese
100 grams icing sugar
Food processor
Pie tin
Put digestive biscuits into food processor and blend into crumbs. Melt butter in saucepan and add the crushed biscuits to melted butter. Mix them well together and transfer mixture to the pie tin, press it down firmly. Place the biscuit base into the fridge for 20 minutes until its set.
Place Mascarpone cheese and icing sugar into food processor and blend together until smooth.
Take cheesecake crust from the fridge and transfer creamed mixture into cheesecake base. Spread the mixture evenly over the base and place it in the fridge to set for 1 hour or more.
Once cheesecake is set, you can put sliced strawberries over the cheesecake spread.
You can now serve your no bake strawberry cheesecake.
You can use other fruits for cheesecake topping, like blueberries or raspberries. You can blend some of the strawberries into the cheesecake mixture. This will give you a strawberry coloured and flavoured creamy cheese mixture.
You can use Graham crackers for the pie crust instead.
Strawberry sauce can be used for the topping.
You can also make the cheesecake in individual glasses.
