How to make Horseradish Sauce

So you want to spice up your Sunday roast? Then what better way to do it than with a delicious homemade horseradish sauce? It's extremely easy to make and will take you less than 30 minutes. Here’s how to make enough to serve 8 people.
What you'll need: 
15g/ ½ oz grated horseradish soaked in 2tbsp of hot water
A pinch of caster sugar
A pinch of mustard powder
1 tbsp white wine vinegar
150 ml/5fl oz Double cream
Salt and Pepper to taste
A mixing bowl
Peel and grade the horseradish and add this to hot water for 15 minutes. Drain and place in the mixing bowl.
Add in the sugar, salt, pepper, vinegar and mustard. Mix well.
Lightly whip the double cream and add to the mixture. Gently mix again.
Now serve.
Crème fraiche can be used instead of double cream.
Traditional mustard can be used instead of mustard powder.
