How To Make Guacamole

The Aztecs loved it so who are we to argue? Shun the tasteless, pre-packaged supermarket attempts at this Mexican classic and make your own fresh, zesty guacamole.
What you'll need: 
2 ripe avocados
1 lime
2 banana shallots
1 garlic clove
Olive oil
Salt and pepper
6-7 cherry tomatoes/2 plum tomatoes
Peel the avocados, remove the stones and cut into small cubes. Place in a medium-sized bowl and roughly mash with a fork.
Finely chop the shallots and garlic before adding them to the bowl. Add the juice of half of the fresh lime.
Roughly chop the tomatoes, discarding the seeds and extra liquid. Add the tomatoes to the bowl before seasoning with salt, pepper, a pinch of sugar and a small drizzle of extra-virgin olive oil.
Stir the mixture thoroughly to marry the flavours. Taste and add seasoning and lime juice to taste. Allow the guacamole to sit for an hour and develop its flavours.
Serve with pita bread, corn chips, fajitas or as an accompaniment to meat or fish.
Add chilli according to your preference.
Coriander and mint compliment the flavours of the guacamole.
Add a dash of spirit vinegar if you prefer your guacamole to be slightly thinner and more acidic.
