How To Make Graham Crackers

This article is for people in the UK who have eaten Graham crackers and crave for them once in a while. For those new to Graham crackers, they are an American cracker which are sweet and are more like cracker cookies. The biscuit to compare them with in the UK are digestive biscuits, but they don’t taste like each other. Graham crackers are sweeter, crispier, square shaped and crack like a cracker when snapped. Most people think you can’t buy Graham crackers in the UK, but there is a shop in Aldershot, Hampshire called The Stateside Candy Co who has an online site as well. They sell Graham crackers and Graham pie crusts, plus other American candies, sodas and groceries. They also sell UK candies and groceries in bulk, their site link is below. Making Graham crackers may seem like an impossible task, but it can be done quite easily. This recipe doesn’t contain the high fructose corn syrup which upsets some people’s stomach.
What you'll need: 
130 grams whole wheat flour
170 grams all purpose white flour (unbleached)
1 teaspoon bicarbonate soda
100 grams brown sugar
4 grams sea salt
1 teaspoon ground cinnamon
110 grams cold butter
115 grams honey (mild flavoured)
1 ½ tablespoons vanilla extract
Food processor
Put the flour, bicarbonate soda, sugar and salt in the food processor. Blend all the ingredients together until it resembles coarse crumbs.
Put milk, honey and vanilla extract in a bowl and whisk them together. Add the liquid mixture to the dry flour mixture and mix well until the dough roughly comes together. The dough should feel sticky.
Flour the works surface and place the dough unto it. Pat the dough down and shape it into a 1 inch rectangle. Wrap the shaped dough in cling film and refrigerate for roughly 2 hours until firm. You can keep it in the fridge overnight if you are not baking it that day.
Take the chilled dough and roll it out further until less than a ¼ inch thick on a floured surface. The thinner they are, the crispier they will be. Cut out rectangle cracker shapes with a knife. Prick the surface of the crackers with a fork or toothpick to decorate with rows of dots.
Place them on a baking tray covered with a baking sheet. Bake into a preheated oven at 180 degrees for 20 minutes or until brown.
Let cool on a wire rack. Enjoy eating your Graham crackers.
Making your own Graham crackers means you know what ingredients are inside them. These homemade Graham crackers can be used for making s’mores or crushed for a pie crust for a cheesecake crust for example. You can cut the crackers into other shapes if you want, they don’t have to be square shaped. When you’ve made Graham crackers once, you’ll be able to make them without thinking. You can make these as gifts for an American friend who loves eating Graham crackers.
You can replace the milk with water instead.
The Graham crackers can be made without cinnamon and vanilla extract if you want.
You can make them without the food processor; just make sure all the ingredients are mixed well.
The crackers can be coated or drizzled with melted chocolate.
To keep the crackers crisp, store them in an air tight container.
