How To make Frosted Coffee Cake
For all the coffee lovers out there, this is the perfect cake for you. It is a quick and easy recipe, the preparation time being 20 minutes, and the cooking time just 30 minutes.
Perfect for a Sunday afternoon tea.
What you'll need:
175g (6oz) butter or margarine
175g (6oz) caster sugar
3 eggs, beaten
175g (6oz) self-raising flour
2 tbsp strong black coffee
icing:
225g (8oz) icing sugar, sifted
50g (2oz) butter
2 tbsp strong black coffee

Pre-heat the oven to 180c or Gas 4.
Grease and line two 20cm round sandwich tins.

Place the butter and the sugar in a bowl. Mix together with a wooden spoon, then beat for 10 minutes until light and fluffy. Alternatively, beat in a mixer for 5 minutes.

Add the beaten eggs a little at a time, beating well between each addition.

Add the flour and fold in lightly with a metal spoon, until evenly mixed. Lightly fold in the coffee.

Divide the mixture between the 2 sandwich tins. Level the tops with the back of a spoon.
Bake in a pre-heated oven for 30 minutwes until the cakes are golden brown and springy to touch.

Turn out the cakes, remove the paper and cool on a wire tray.

To make the icing, place the icing ingredients in a bowl over a pan of hot water. Heat gently, stirring until smooth and glossy. Remove the pan from the heat.

Leave the icing until it is cold, then beat until thick enough to spread.

Place 1 half of the cake onto a serving plate and spread with half the icing. Cover with the other half of the cake. Spread the top with the remaining icing, swirling with a round-ended knife.
