How to make courgettes stuffed with spicy lamb

We all try our best to eat healthy but trying to watch what you eat is always difficult and somewhat tiresome. How many salads and vegetable can one eat? But here's a tasty and easy recipe that will keep you feeling satisfied and full, while keeping the weight off at the same time.
What you'll need: 
4 large courgettes
1 onion, chopped
1 garlic clove, crushed
2 tbsp olive oil
500g mince lamb
4 tomatoes, peeled and diced
small handful flat-leaf parsley
2 tsp ground cinnamon
Heat the oven to 200C or gas 6. Cut the courgettes lengthways into two. Using a teaspoon, scoop out the seeds from the centre. Brush the courgette skins with half the olive oil and sit them up and roast for 20 minutes.
Heat the remaining oil in a saucepan, add the chopped onions and cook for 3 minutes until softened. Add the garlic and cook for a minute.
Add the lamb mince and cook over a high heat for 3 minutes, stirring constantly to break up any clumps of meat, until browned. Discard any excess fat.
Sprinkle over the cinnamon, cook for another minute then remove from heat. Stir in the parsley and tomatoes.
Spoon the lamb mixture into the courgettes and bake for 10-15 minutes.
You can add mint and breadcrumbs to give it a crunchy, fresh taste
