How To Make Blueberry Cheesecake Pots

This dessert is wonderful for dinner parties and can be done in a few minutes. These blueberry cheesecake pots are served in individual glasses. The glasses can be long or short glasses. The blueberry cheesecake will look charming served within the glasses.
What you'll need: 
200 grams blueberries
2 tablespoon caster sugar
5 digestive biscuits
70 grams butter
250 grams mascarpone cheese
4 tablespoons icing sugar
Juice of 1 lemon
4 tablespoons double cream
4 glasses
Food processor
1: 
Place the blueberries and sugar into a saucepan and cook for 3 minutes. Remove from the heat and let it cool.
2: 
Put the digestive biscuits and butter into a food processor and blend into fine crumbs. Transfer the biscuit mixture to the glasses and press them down. Place the glasses with the biscuit base in the fridge to chill.
3: 
Place the mascarpone cheese, lemon and icing sugar into the food processor. Blend all the ingredients together until they are smooth and fluffy.
4: 
Take the glasses out of the fridge. Place layers of the cheesecake mixture and blueberries in turn on to the bisvuit base and end the top with blueberries.
5: 
You can now serve blueberry cheesecake tops.
Conclusion: 
This is a really quick dessert to make for the busy times of the year like Christmas for example, but you can make it at any time of the year. It looks delicious and will tempt anyone. You can substitute other fruits for the filling if you want, like cherries or raspberries.
Tips: 
You can add other flavours to this desert if you want like cinnamon or vanilla.
You can finish the top layer with cream and blueberries dropped randomly on it.
You can make this dessert without a food processor if you want.
You can also serve this dessert in clear plastic cups as well.
