How To Make Blueberry Cheesecake

Blueberry cheesecake is a popular and tasty dish. If you want something different to offer guests or to have yourself, you can’t go wrong with making a blueberry cheesecake. This is a simple and easy blueberry cheesecake to make.
What you'll need: 
200 grams digestive biscuits (crushed)
75 grams butter
500 grams low fat cream cheese
3 eggs (beaten)
650 ml condensed milk
½ cup lemon juice
1 teaspoon vanilla extract
230 grams blueberries
Cake tin
1: 
Put the butter into a saucepan over a medium heat. Remove from the heat when the butter is melted and mix in the crushed digestive biscuits. Mix well and transfer to the cake tin, press the mixture down firmly to the base of the tin. Put it in fridge for 15 minutes.
2: 
Place cheese in a bowl and whisk until smooth. Add the milk, lemon juice, vanilla and eggs. Whisk all the ingredients together until fluffy and smooth.
3: 
Take the cheesecake base out of fridge and pour the cheesecake mixture into the base. Spread mixture evenly around the base and place the blueberries over the top of the cheesecake spread.
4: 
Bake in pre-heated oven at 180 degrees for 50 minutes until cheesecake is set.

Let it cool completely and serve when ready.

Tips: 
You can mix in the blueberries into the cheesecake mixture instead of placing it on top.
You can use cherries or strawberries for your fruit topping for an alternative.
You can use the food processor to blend the cheesecake mixture.
