How to make a Bellini cocktail

The Bellini is a very simple cocktail involving peach and prosecco sparkling wine. Many people make it using champagne but it should be made with prosecco to make it authentic. Plus, you get a hell of a lot more bang for your buck with prosecco. Spend £10 on a bottle of prosecco and you get the quality you’d expect from a £30 bottle of champers.
What you'll need: 
5ml lemon juice
25ml peach juice (or puree)
10ml peach liqueur (optional)
Cocktail shaker
Champagne glass
Lemon zest
Add the lemon juice, peach juice, peach liqueur and prosecco to the cocktail shaker.
Fill the cocktail shaker with ice then STIR (do not shake!) until there is condensation on the outside of the shaker.
Pour the contents of the shaker into the champagne glass.
Take the lemon and cut a piece of zest around 10cm long, or as long as you can (it should be around 1cm thick).
Curl the zest around the pencil/straw to make it into a spiral. Hold for a couple of seconds and it should keep a spiral shape.
Remove the pencil/straw and add the zest to the drink, or balance on the side of the glass.
