How To make Baked Stuffed Peppers

Baked Stuffed Peppers is a great, tasty recipe. Perfect for a light lunch or side dish with a main meal. Also suitable for vegetarians. This recipe will serve 4 people.
What you'll need: 
4 large firm red peppers
1 tbsp oil
1 large onion, (finely chopped)
2 cloves of garlic, (finely chopped)
4 large mushrooms, (chopped)
Salt & Pepper for seasoning
2 tbsp of parmesan cheese, (grated)
2oz pre-cooked rice, of any kind, wild rice, basmati or brown rice, all taste good.
1: 
Pre-heat the oven to Gas 4. First, cook the rice of your choice, following the instructions on the packet. When cooked, drain and set to one side.
2: 
Wash the peppers, and slice off the top of each pepper with a sharp knife. Put to one side. Take out the seeds, being careful not to cut the pepper itself.
3: 
Heat the oil and fry the onions and the garlic for a few minutes. Add the mushrooms, and the rice to the pan and season. Mix together well.
4: 
Fill each pepper with the mixture, squashing down with a spoon. Sprinkle each pepper with the grated parmesan cheese and replace the tops.
5: 
Place in a greased baking dish, and bake for 30-40 minutes.
Conclusion: 
These baked peppers taste juicy and delicious. A great addition to any meal, or on their own.
Tips: 
For variation, youu could add whatever you like to the filling, for instance, ham, or chorizo would taste good for meat lovers.
