How To Make Baked Leek and Potato Gratin

Your rating: None
Potatoes baked in a creamy sauce make the ultimate comfort food, whether served as an accompaniment to pork or fish dishes or, as here, with plenty of leeks and melted cheese as a main course.
What you'll need:
2lb medium potatoes, thinly sliced
2 large leeks, trimmed and chopped finely
7oz ripe Brie or Camembert cheese, sliced
3/4 pt single or double cream
pinch of salt and black pepper
Pre-heat the oven to 180C or Gas 4. Cook the potatoes in plenty of salted water, boiling for 3 minutes, until slightly softened, then drain.
Place half of the potatoes in a shallow oven proof dish and spread them out to the edge.Cover with two-thirds of the leeks, the add the remaining potatoes. Tuck the slices of cheese and the remaining leeks in among the top layer of potatoes.
Season with salt and pepper, and pour the cream over the top of the potatos.
Bake for 1 hour until tender and golden. Cover with foil if the top starts to overbrown before the the potatoes are tender.
There we have a delicious, filling meal, or side dish. This tastes absolutely wonderful!
