How to bake vegan banana-chocolate-peanut butter cookies

Your rating: None
Vegan baking may seem intimidating if you haven't tried it before, but these cookies are far easier than most traditional cookie recipes. The best part is that they're made up of very healthy ingredients, so you can indulge your sweet tooth free of guilt.
What you'll need:
2-3 bananas
2-4 tbls peanut butter
2 tbls chocolate chips or chunks
1 tbls flour
a baking sheet
large mixing bowl
Preheat your oven to 180°C (350°F).
Peel 2-3 bananas, place them in your mixing bowl, and mash them up. Make sure you don't leave any large chunks of banana.
Add peanut butter by the spoonful until the mixture becomes sticky. The precise amount of peanut butter you add is largely a matter of personal taste. If you don't want your cookies to come out tasting strongly of peanut butter, you can add only a couple of tablespoons, just enough to make the mixture stick to itself. On the other hand, if you like peanut butter, feel free to add plenty. Just make sure that the mixture doesn't become too dry, since the moisture in the cookies comes mostly from the bananas.
Add a small amount of flour until the mixture takes on a doughy consistency.
Mix in chocolate chips.
Form the dough into cookies and place them on the baking sheet. If at this point you find the dough isn't sticking together at all, try adding a very small amount of flour. Keep in mind that these cookies won't expand as much as traditional cookies do during baking, so you may want to make larger cookies.
Bake for 10-12 minutes. Set to cool, and enjoy!
You can make these cookies even more decadent by adding a bit of cocoa power or finely ground coffee to the batter.
Try using crunchy peanut butter.
